Vicky: Favourite healthy recipe:  Gluten Free Lemon Crinkle Cookie

2 cups almond flour
1 cup sugar
2 tbsp lemon zest
2 egg whites, room temperature
1 tsp lemon extract
¼ cup powdered sugar

Preheat oven to 350. Prepare baking pan with parchment paper.

In a medium size bowl, stir together almond flour, sugar, lemon zest and a little salt. Set aside.

In another bowl, beat egg whites at medium speed until soft peaks form. Stir in the lemon extract and flour mixture.

Roll into 1 ½ teaspoon size balls.  Roll in powdered sugar and place 2 inches apart on baking sheet.

Bake for 15-17 minutes until tops are cracked.
